Creamy Peanut Butter Frosted Cupcakes

One of my photographer friends had this recipe posted on her blog and I thought it sounded good and decided to make them today and boy are the yummy!!  Thank you Jessica for this recipe

Cupcakes

1 cup soy or non dairy milk ( I used coconut milk)
1 tsp apple cider vinegar
3/4 cup sugar
1/3 cup oil
1 tsp of vanilla   1/2 tsp almond (or more vanilla)
1 cup flour
1/3 cup dutch cocoa powder or reg. cocoa
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Preheat oven to 350 degrees and line muffin pan with liners
whisk soy or non dairy milk and vinegar and let sit for a couple of minutes
Add the sugar, oil and extracts and mix til foamy
In another bowl mix flour, cocoa, baking soda, baking powder and salt.
Add dry to wet ingredients in 2 batches and beat til no lumps.
Pour into liners 3/4 full and bake for 18-20 minutes depending on how hot your
oven is ( mine only took 16 minutes)

Peanut Butter Frosting

1/2 cup butter (earthbalance)
2/3 cup peanut butter
3-4 cups of confectioners sugar
1 tsp vanilla
1-2 tbs non dairy milk ( I used coconut milk)
